I am starting a new weekly project. I am going to blog pictures and recipes that I create with our weekly CSA delivery of fresh fruits and vegetables. This is our first year receiving a box of fresh organic produce from the Sweet Beet Farm in Montrose, MN. CSA stands for community supported agriculture and consists of families purchasing a share in the summer and fall harvest. I have never met our farmers, Nick and Amelia, but I can tell you their vegetables and fruit are delicious! What's even better is I can pick our produce up at Kuzma's Chiropractic, just two doors down from our law firm. It is so convenient!
I was inspired to start this project as I usually make up a recipe each week. Plus, the veggies are so pretty, I just had to make some pictures of them. The recipes will be vegetarian, with planted-based (vegan) options. I love to cook, but hate to measure, so I will try to put accurate measurements, but I mostly add as I go, so I may need to estimate a bit. I also try to use as little sugar, oil and salt (SOS) as possible when I cook, so the recipes should be quite healthy.
